Ingredients Directions

2 carrots, washed and peeled
½ c apple juice
½ c water
1 English cucumber, washed
½ tsp dill
½ honey
1 Tbsp. plain low-fat Greek yogurt
Pinch of salt and pepper

 

Cut Carrots into French fry size sticks, crinkle cut looks best. Mix apple juice and water in a sauce pan, bring to a boil, add carrots. Cook until carrots are al dente ( still a bit firm), remove from pot and drain ,salt if desired.
Remove end of cucumber then cut 2 two inches pieces, use a spoon or melon baller to remove most of the inside. Creating a “cup” for the dip.
Grate about 1 cup of cucumber and wrap in cheesecloth to squeeze out liquid. Mix cucumber, yogurt, honey and dill together to make tzatziki.
Serve the carrot fries with the tzatziki in the cucumber cups.
