Crispy Potatoes

Ingredients Directions

12 red Potatoes *
4 Tbsp olive oil
1 tsp kosher salt
2 tsp thyme, fresh or 1 tsp dried, any herb you prefer will work.
Non-stick spray

*Select potatoes about the same size

*Adjust according to number
of potatoes you would like to
cook.

Wash potatoes. Boil whole in a large pot with enough water to cover. Cook about 15-20 minutes until tender when you stick a fork in the potato.

Preheat oven to 450 degrees.
Spray a large pan or baking sheet (with sides) with non-stick spray, or line pan with aluminum foil and spray for easy clean up. Place potatoes on the pan and smash them down with a fork or heavy cup. Drizzle the olive oil over potatoes and sprinkle with salt, pepper and thyme (or other choice)
Bake for about 20-25 minutes or until crispy. Finish with cheese if you like.
